In Galician Rías this bivalve shellfish are grown in trays (floating structures). The extraordinary richness of these waters ensures high quality of the raw material, with lots of nutrients and an optimal size and flavor. Our production directly receives the mussel rafts and after careful selection, we elaborate hand following traditional techniques under strict sanitary control, certified ISO-9001. Only specimens used in its appropriate level of texture and size, in addition to using only the finest raw materials as virgin olive oil. The manufacturing process is "old", all natural and without the use of artificial preservatives. Removal of hair ("beard") mussel which is what connects you to the rope punt and packaging, are made in a completely manual process, as was done 130 years ago. This product has been designed specifically to encourage their use for all types of people including those who have difficulty handling objects, be it due to limited vision or manipulation.
