The Fruitesse beer variety is mixed fermentation, that it has a first phase of fermentation with a strain of Belgian top-fermenting yeast and then a blend of bacteria which will provide, together with the added fruit inoculated, and a period extensive barrel aging, acid profile but fails to have the intensity that one would expect from a Lambic or Gueuze. The beer in question falls within Flanders Red Ale style with the addition of cherries, raspberries and strawberries, and is a blend between young and aged beers beers, which provides an interesting and enticing complexity.
Has a very particular crystalline, with a head of foam also slightly pink, reddish pink compact formation and retention medium. Fruit aroma, mainly cherry and raspberry, with hints of spice and the whole character of Brettanomyces that adds such a unique and moderately aggressive complexity shows. The palate comes light, sour and acidic, extremely refreshing with a medium-high carbonation. The flavor contrast between acidity and sweetness that gives the fruit more sour fermentation character.
