The mission of Castell d 'Encús is to obtain high quality wines. The winery has been designed to operate by gravity in all its processes and has the most advanced winemaking technology. Vineyards 1,000 meters The elevation of the property (850-1000 meters), in an area of good solar exposure and wrapped a large wooded area, together with a historical aspect which has a chapel and ancient grape fermentation vats dug into the rocks by monks of the hospital order (XII), make the place has a special and magical environment. The grounds are generally calcareous Franco, low in organic matter, which together with the continental climate, with high thermal contrast between day and night, allows us to obtain wines of the highest quality. The harvest is done manually and in small boxes of 10 kg of grapes exclusively from the estate. The wine is fermented in different materials: wooden vats and vats of stainless steel and natural stone. Thanks to these three materials we obtain wines with very different tones and shades and great aromatic complexity. Fermentation stone Because of its medieval aspect, the property boasts a large number of fermentation vats sculpted stone that operate by gravity and that after some initial tests are reutilitzando to ferment an important part of both our white wines as black. For all Quest wine fermentation process is performed on these presses stone. Respect for the environment Because of our belief in relation to the environment does not use any herbicide, insecticide or fungicide except those permitted in organic agriculture.
